About the Recipe
This zucchini recipes is a very rich meal. It delights the whole family, even the picky ones!

Ingredients
4 Medium Size Zucchini
1 Tbs Extra Virgin Olive Oil
3 Tbs Asiago Cheese or Cheese of your Choice
2 English Muffins
1 Garlic Clove
2 Green Onions
1 Egg
1/2 Cup Bread Crumbs
Sea Salt to Taste
White Pepper
Basil Leaves
2 Peppermint Leaves
Preparation
Rinse off the zucchini and dry them.
Cut the round ending and keep the tip; it will help you for the next step.
Shred the zucchini and place them in a pan.
Cut the garlic clove into two halves, grate, and add to the shredded zucchini.
Finely slice the green onions and add to the pan.
Add the extra virgin olive oil and sea salt to taste and gently combine all the ingredients.
Turn on the heat on a medium-low flame for 5 minutes.
In the meantime, pour the milk into a small bowl.
Slice and dice the English Muffins put them into the bowl containing the milk, and let them soak for 4minutes.
After four minutes, drain the excess milk.
In a medium-sized bowl, dump the English muffins, the zucchini shred mix, the basil leaves, peppermint leaves, the ground pepper, the egg, the shredded cheese, and the bread crumbs until it creates a dense dough.
Line the baking tray with parchment paper and set it aside.
Prep a plate with 1 cup of bread crumbs.
Shape the patties, tap both sides into the bread crumbs, and place them on the lined tray.
Heat a Tbsp of extra virgin olive oil in a frying pan.
Place the patties and cook on both sides.
Plate and serve.
