About the Recipe
This is the easiest way to roast your bell pepper.
These colorful vegetables come in different colors and sizes, but they all have the flavor and the super loads of fibers, vitamins, minerals, and antioxidants. Simple and delicious, exactly how we like sharing our recipes at Mad for Med so everyone can cook and benefit from food.
After using this baking method, you can add the condiment or stir-fry them with garlic, extra virgin olive oil, and black olives for a couple of minutes and add a sprinkle of bread crumbs to have them au gratin.

Ingredients
2 Bell Peppers (or more for more servings)
2 Tbsp Extra Virgin Olive Oil
Sea Salt to Taste
1 Garlic Clove
2 Tbsp Extra Virgin Olive oil
1 Organic Lemon (Juice)
Preparation
Rinse off the bell peppers and dry them using a clean unscented cloth or a food-grade paper cloth.
Line up your baking tray with parchment paper.
Place the bell peppers next to each other and bake for 40 minutes in the oven at 200 C (390 F)
After 40. minutes take the bell peppers out of the oven and let them cool down for ten-fifteen minutes.
While they cool down, peel the garlic clove, cut it in half and remove the inner germ.
Slice it and set it aside.
Remove the outer skin, the internal seeds, and the top green stem.
Slice by tearing apart the natural sections of the bell peppers.
Dress by adding a pinch of sea salt, the extra virgin olive oil, garlic, and lemon juice, and mix till combined.
