About the Recipe
Zucchini is such a versatile vegetable. It is light, fresh, low in calories, and low in antioxidants and folates. This recipe is an explosion of flavors; a perfect match created at Mad for Med just for you! It is ideal to accompany a crunchy slice of sourdough bread for a light lunch or dinner during summertime.

Ingredients
2 Zucchini
16 oz Straccialetta Cheese
2 Tbsp Extra Virgin Olive Oil
Sea Salt to taste
1 Garlic Clove
Basil Leaves
Preparation
Pour the extra virgin olive oil into a tiny bowl.
Peel the garlic, cut it in half, and remove the inner germ.
Add the two halves into the little bowl containing the extra virgin olive oil.
Preheat your cast iron grill skillet.
Rinse off the zucchini and dry them
Cut their edges.
Slice them into strips using a peeler or a mandoline slicer with finger protection.
Grill the zucchini ribbons for 3 minutes on each side.
Add a pinch of sea salt during the cooking time.
Once cooked, put them on a cooling rack.
Plate by rolling the zucchini, leaving a hole in the middle.
Fill a piping bag with the stracciatella cheese and fill the zucchini.
Drizzle with the flavored extra virgin olive oil and garnish with basil.
