Creamy Chickpeas & Peas Soup

About the Recipe

This recipe is a simple recipe with many nutrients made of carbs, proteins, vitamins, minerals, and good fats. It is light and tasty and such an excellent comfort food.

Ingredients

  • 2 Cups Peas

  • 2 Cups Chickpeas

  • 1 Big Russet Potato

  • 1 Garlic Clove

  • Parsley to Taste

  • 2 Green Onions

  • Basil to Taste

  • 2 Tsp Sea Salt

  • Red Hot Chili Peppers to Taste

  • 2 Tbsp Extra Virgin Olive Oil

Preparation

  1. Chop the onions and put them into a small saucepan.

  2. Add one Tbsp extra virgin olive oil.'

  3. Add the peas and one teaspoon of sea salt and cook on low heat for 3 minutes.

  4. Add one cup of spring water and basil, bring it to a boil, and then simmer till peas get soft.

  5. In a separate saucepan, pour the chickpeas, two cups of water, one tsp sea salt, one garlic clove cut in half deprived of its internal germ, and a small bunch of parsley. Bring it to a boil, then gently simmer till soft.

  6. Clean the potato and peel it. Dice it to 1/2 inch, add a pinch of salt, add three cups of water, and let it cook till soft.

  7. Once all ingredients are ready, combine them and blend them, adding two cups of water, red hot chili pepper to taste, one teaspoon of extra virgin olive oil, and a pinch of sea salt if needed.

  8. Bring it back on the stove on low heat till hot.

  9. Plate and garnish with a drizzle of extra virgin olive oil, basil, or any herb you like.
