About the Recipe

At MAD For MED, we tested a new method to add extra flavor to your chicken breast, keeping it soft and moist, from an idea by Chef Glenda Kelly to you.

Ingredients

  • 1 Garlic Clove

  • 2 Tbsp Extra Virgin Olive Oil

  • Dry Thyme To taste

  • Sea Salt to Taste

  • 2 Tbsp Whole Milk

Preparation

  1. Peel the clove garlic, cut in half, remove the inner germ and set aside.

  2. Blend the garlic, milk, and olive oil.

  3. Pour into a food-grade favoring syringe.

  4. Start injecting the needle into the top edges, and while pulling the syringe back, slowly inject the mix.

  5. Repeat the procedure on both sides along the whole length of the chicken breast.

  6. Massage with some extra virgin olive oil and sprinkle with dry thyme on both sides.

  7. Wrap with food-grade plastic wrap and put back in the fridge for at least one hour.

  8. After the resting time, preheat your cast iron pan and cook on both sides thoroughly.

  9. You can serve it with a white asparagus side dish (here), a classic bruschetta (here), or with a mixed salad (here), or why not a tasty soup (here)

Enjoy!
