About the Recipe
This simple and delicious recipe is a hymn of love for the Italian Flag, invented on Capri Island in the beautiful bay of Naples. Also known as the white gold, mozzarella Caprese is a perfect meal during summertime. This is the time of the year when the buffalos produce the best milk and tomatoes, and basil bloom. You may find imported buffalo mozzarella abroad, yet it will not be the same. Mozzarella is a fresh dairy consumed at its best the same day it was made, actually a few hours later.
Those not living in the Campania region can still make a good Caprese salad with the imported ones. A suggestion is to put the mozzarella cheese in bain marie for a few minutes to regenerate the milk.

Ingredients
1.1 Lb Buffalo Mozzarella Made in Campania Region
1.1 Lb Beefsteak Tomatoes
3 Tbs Extra Virgin Olive Oil
Sea Salt to Taste
Basil to Taste
VARIANTS INCLUDE
Oregano
Vinegar Glaze
Preparation
Clean and slice the tomatoes.
Slice the mozzarella cheese only before serving.
Plate by alternating a slice of mozzarella and one of tomato.
Add the basil.
Sprinkle with a pinch of salt.
Add the extra virgin olive oil going in circle three times from the inside out.
Serve and enjoy!
