About the Recipe
Who does not love a cozy meal during autumn or winter? Butternut squash is an excellent way to treat ourselves during rainy or cold snowy days. Rich in nutrients, we love it!

Ingredients
1 Butternut Squash
1 Clove of Garlic
1/2 White Onion
2 Tbs Extra Virgin Olive Oil
Parsley to Taste
Preparation
Pour the extra virgin olive oil into a tiny bowl or coffee cup.
Peel off the garlic clove, cut it into halves, remove the internal sprout leaf, and place it into the extra virgin olive oil bowl.
Rinse off, dry, and peel the butternut squash.
Chop the onion and use one whole half.
Pour the extra virgin olive oil and garlic into a medium-sized, large pot.
Place the half onion into the pot with the flat part in contact with the bottom and let it caramelize slowly on low heat.
Once the bottom of the onion looks golden brown, add the butternut squash and stir.
Add the parsley and the sea salt, stir, cover with the pot lid and let it cook for a couple of minutes on low heat.
After two minutes, add the water; (the water should not go above two inches above the butternut squash.
Turn on the heat, stir and let it reach the boiling point; lid off.
Once it reaches the boiling point, turn down the heat to very low, place a wooden spoon on one side edge of the pot and cover with the lid. Let it cook till soft.
Remove the garlic and harmonize by using a blender.
If still too liquid, put it back in the pot till it reaches the consistency you like.
Plate, season with spices you like, add an extra tsp of extra virgin olive oil, and enjoy!
