About the Recipe

Making bruschetta in Naples, "That's Amore"Italy, is an art.
The tomatoes of piennolo are one of a kind growing on volcanic soil, giving these exquisite delicacies an extra flavor. Of course, you can not find these tomatoes abroad, so a replacement is "allowed."

Ingredients

  • 4 Sourdough Bread Slices

  • 1 Garlic Clove

  • 3 Tbs Extra Virgin Olive Oil

  • 1 Pomodori del Piennolo/Beefsteak Tomato/Cherry Tomatoes

  • Basil to Taste

  • Sea Salt to Taste

  • Oregano (Optional)

Preparation

  1. Preheat the oven to 405 F (200C)

  2. Rinse off the tomatoes and dry them.

  3. If using beefsteak tomatoes, slice and dice. Otherwise, cut the cherry tomatoes in halves and put them in a bowl.

  4. Add one out of the three Tbs of extra virgin olive oil.

  5. Tear apart five basil leaves and add to the bowl.

  6. Add a pinch of salt and stir.

  7. Place the bread upon a raked baking tray and bake for 10-15 minutes till golden brown.

  8. Once out of the oven, let them cool until you can handle them.

  9. Rub the garlic on one side of the bread and top with the Caprese salad.

  10. Plate, add extra virgin olive oil and extra basil.
