About the Recipe

A low calorie side dish rich in nutrients. Perfect to it by itself or as a side dish.

Ingredients

  • 2 Beetroots

  • 1 Bag Lamb Lettuce

  • 1 Organic Lemon

  • 4 Tbsp Extra Virgin Olive Oil

  • 1 Tsp Sea Salt

  • 1 Pinch of Raw Cane Sugar

Preparation

  1. Toast the pecans (How to toast pecans here)

  2. Peel the beetroot and rinse it off.

  3. Slice and dice 1/2 inches cubes.

  4. Add the extra-virgin olive oil, sea salt, and cane sugar.

  5. Add the lemon juice and the fresh thyme.

  6. Stir, cover, and marinate for 30 minutes. (Stir every 10 minutes.)

  7. Rinse off the lamb lettuce and place it into a large bowl. Add the marinated beetroot and the crumbled pecans.



Plate, serve and enjoy!
