How to Clean and Prepare The Trout
Wear food-grade gloves.
Rinse the trout under cold water and pat it dry with paper towels.
Use a sharp knife to make a shallow cut from the anus to the gills along the belly of the fish, being careful not to puncture any organs.
Remove the guts and organs by gently pulling them out with your fingers or using a spoon or fish scaler to scrape them.
Rinse the inside of the fish under cold water to remove any remaining debris.
Use scissors or a sharp knife to trim off the fish's fins, tail, and head.
Rinse the fish again under cold water and pat it dry with paper towels.
Season the fish with salt, pepper, and any other desired seasonings.
You can grill, bake, or pan-fry the trout until it is cooked through and flaky.
NOTE: It's important to handle raw fish carefully and wash your hands and tools thoroughly to prevent the spread of bacteria.
Prepare the Marinade
Ingredients
1 Garlic Clove
1/4 cup of cold pressed extra virgin olive oil
Sea salt to taste (optional)
1 Tbsp of Pinot Grigio
Pink Peppercorn
Directions
Slice the garlic into halves.
Remove the Inner germ and place them into a small bowl.
Add the cold pressed extra virgin olive oil and the pink peppercorn into the bowl cover and let it seat for 10 minutes.
After 10 minutes add the Pinot Grigio
Once the batter is ready top the trout filets (preciously placed in a rectangular container.
Cover the container with wrapping plastic.
Let it marinade for at least two hours on the top shelf of the fridge.
Smoke the Trout Filets
Smoke the trout for 1-2 hours. Marinating the trout filet for at least 2 hours is essential for the best result because it allows the flavors to penetrate the fish fully and gives it a delicious smoky and tangy taste. If you need more time, you can marinate the trout for as little as 30 minutes, but the flavor will be less intense. Once the trout is thoroughly marinated, it's ready to be smoked to perfection.
Cooking & Plating The Trout Filets Directions
Place the trout filets onto parchment paper.
Top with the marinade.
Pack like a candy.
Cook for 1 minute each side.
Unwrap and plate on a flat white dish.
Top with spices of your choice and a sprinkle of extra virgin olive oil.
